Butternut Squash with Baby Spinach

2 1/2 lbs butternut squash, cut into 1" cubes
2 large red onions, peeled and chopped (about 4 c)
3 Tbsp olive oil
salt and pepper to taste
1 (6 oz) pkg fresh baby spinach
3/4 c sweetened dried cranberries

Combine squash and onion in large shallow pan; drizzle with oil and sprinkle with salt and pepper. Toss lightly.

Roast 55 minutes at 350 degrees or until tender and brown. Add spinach and dried cranberries; toss and serve.
